Fast Food

Shrimp and Spinach
Adhering to a diet that is lowering my blood sugar and preventing me from ending up a blind old woman without feet has required some inventiveness on my part.  In my defense, for many years fast food has not been the traditional drivethru fare in a bag.   It came in a box and took 2 minutes to microwave.

So I bring you my latest invention, which tastes so good others have probably discovered it.  I'll give it to you just in case you too still don't like to cook but are nonetheless ravenous:

Ingredients (in order of appearance)
Olive Oil, virginity not required
Fresh Cilantro (optional)
Precooked Shrimp, frozen
Fresh Baby Spinach, washed

Layer the above into a skillet with a clear glass lid.  (The importance of the clear glass lid will be revealed.)

Use a small splash of oil and coat the skillet.  Tear up the cilantro for flavor.  Layer the skillet with the frozen shrimp.  (Be generous, but you don't have to eat the whole bag in one sitting.)  Stuff the skillet with the clean fresh baby spinach.  Yes, make sure it's washed--trust me, you don't want grit.

Turn the burner on low to medium low.  Put the glass lid on the skillet, and let it saute and steam UNTIL YOU CAN SEE THROUGH THE GLASS LID THAT THE BABY SPINACH TURNS DARK GREEN AND MOIST.  (Wilted just plain sounds nasty.)   This doesn't take long, so don't go off and get busy with something else.  Maybe two minutes, it's possible, just watch.  As soon as the clean fresh baby spinach turns dark green and moist, take the skillet off the heat and pour the contents into a bowl.

There's probably enough for two people if you have side dishes, but if it's all you're going to eat, hog it.  I specified a bowl because when you've finished eating the shrimps and the spinach you'll find a nice tasting broth, which, with a tip of the bowl, you can quickly slurp.  That much protein and vitamins and healthy fat should keep you from starving for one night anyway.

I fixed a glass of sweetened peach mango green iced tea with fresh mint to go with.

Let me know if you like it.

P.S.  Don't eat the tails.
