Swimming in the Ice and Sweet Potatoes

Three ducks were in a squad with one duck swimming point, appearing to be patrolling the middle of the pond to keep it free of the ice crowding out from the edges on this Thanksgiving morning.  It's a beautiful blue sky day for all that it is finger-numbing cold.

Here's my recipe for Holiday Sweet Potatoes:

A half dozen sweet potatoes, varying sizes
Butter
Brown Sugar (Splenda is fine)
Cream
Nutmeg
Cinnamon
Ham chunks (pre-cooked)
Pecans
Marshmallows (optional)

Microwave the sweet potatoes, average 7 to 8 minutes  each, depending on the size and on your machine.  Cool and skin.  (Best to cook the sweet potatoes the day before you want to put the mixture together.

Mash the cooled sweet potatoes.  It's okay to leave some lumps if you like that.  Cream in at butter and brown sugar.  Beat in the cream, nutmeg and cinnamon.  Some people like it beaten to Sweet Potato Pie or Souffle, but I think mixing is fine.  Stir in chunks of precooked ham and pecans.   Heat.

My kids like to have marshmallows on top, melted and browned lightly, in which case you should brown in the oven rather than the microwave, which can make a tremendous mess of marshmallows.  If you are diabetic skip the marshmallows and sprinkle a few more pecans on top.

I'm taking sweet potatoes for our feast tonight in Niwot--Keith and Mary are cooking up the turkey and fixings.  Can hardly wait to see the kids and our grandson.  Happy Thanksgiving to all.
